Is it possible to set a default image for a folder to be displayed when viewing said folder in thumbnail view? Currently Plone appears to choose a containing image at random for it's display.

I think it's possible. Assume that you are using Dexterity for all the content types, first go "Site Setup" -> "Dexterity Content Types" -> "Folder" -> "Behaviors" and check "Lead Image". This way you will see the extra fields "Lead Image" and "Lead Image Caption" when editing folders. Then customize "Thumbnail View" template to meet your needs. AFAIK, the template is at plone.app.contenttypes/browser/templates/thumbnail_view.pt
